My wife makes a wonderful banana cake. It is the culinary highlight to have with my coffee of an evening when we have one. I even go as far as purchasing a couple of bananas, hiding them until they are well and truly ripe and then popping them in the fruit bowl when nobody is looking and declaring “Oh look, these bananas have gone off” knowing full well she will then swing into action and make me a banana cake. But each cake is different. Depending on how patient I have been in my banana game of hide and seek will determine the moisture of the cake. The size of the bananas I have managed to squirrel away will depend on the flavour of the cake. Having the right ingredients in the cupboard or a substitute ingredient all contribute to the unique flavour and texture of the cake. How long will the cake be left in the oven and at what temperature will add to the end result (I do love a crispy, slightly burnt top)
